THE DHS CULINARY ARTS PROGRAM PREPARES STUDENTS FOR ENTRY-LEVEL POSITIONS IN THE HOSPITALITY AND/OR FOOD SERVICE INDUSTRY. THE PROGRAM ALSO PREPARES STUDENTS TO FURTHER THEIR EDUCATION AT POST-SECONDARY CULINARY ARTS AND RESTAURANT MANAGEMENT SCHOOLS.
CLASSES MEET 2-3 TIMES PER WEEK FOR 85 MINUTES PER SESSION. STUDENTS IN ALL GRADE LEVELS ARE WELCOME TO SIGN UP FOR THIS CLASS. THE CULINARY PROGRAM PROVIDES STUDENTS WITH BASIC AND ADVANCED CULINARY KNOWLEDGE AND SKILLS. STUDENTS WILL LEARN ABOUT FOOD AND EQUIPMENT SAFETY, KITCHEN SANITATION, MENU PREPARATION, NUTRITIONAL ANALYSIS OF RECIPES, AND QUANTITY FOOD PREPARATION TECHNIQUES. CULINARY STUDENTS ALSO PARTICIPATE IN CATERING EXPERIENCES FOR THE SCHOOL DISTRICT AND THROUGH COMMUNITY EVENTS. THEY WILL ALSO LEARN BASIC RESTAURANT MANAGEMENT SKILLS THROUGH THE OPERATION OF TIGERS DEN CAFE'. TIGERS DEN CAFE' IS A STUDENT-BASED ENTERPRISE AND RESTAURANT LICENSED BY THE FLORIDA DEPARTMENT OF HEALTH.
STUDENTS ARE REQUIRED TO WEAR UNIFORMS AND CLOTHING THAT MAY DIFFER FROM THE SCHOOL DRESS CODE GUIDELINE. UNIFORMS ARE REQUIRED DUE TO THE SAFETY AND SANITATION STANDARDS SET BY THE FOOD SERVICE INDUSTRY. ADVANCED CULINARY STUDENTS WILL BE PROVIDED WITH "SERVSAFE" SAFETY AND SANITATION TRAINING. "SERVSAFE" CERTIFICATION WILL BE ISSUED TO ALL STUDENTS WHO MEET THE STATE STANDARD.
